    INGREDIENTS

    • 2 heads of romaine lettuce, washed and dried

    • 1/2 freshly grated Parmesan cheese

    • 1/2 cup extra-virgin olive oil

    • 1/3 cup real mayonnaise

    1. Cook bacon until crispy. Set aside to cool, then cut into small pieces.

    2. Chop or tear romaine into bite-sized pieces and place in a large serving bowl.

    3. Sprinkle with grated Parmesan cheese, several whisps and and bacon pieces. Whisps are crunchy Parmesan cheese crisps and make the most delicious alternative to croutons. I think theyre even better because, when is more cheese ever not?

    4. Put olive oil, mayonnaise, egg, garlic, salt, pepper and dry mustard into a small bowl. I use Hellmans Real Mayonnaise, which has zero carbs and sugar. Blend using as immersion blender. Drizzle over salad, toss and serve.

    This makes a LOT of salad because we eat it as our meal. But you could prepare a smaller version and refrigerate the extra dressing to use the next day.
