What To Look For In A Keto Frozen Dinner
The frozen dinners of my youth, now that I look back, were pretty gross. But they were a rare treat and we thought it was fun and special to get to eat a frozen TV dinner on a tray table!
In college and young adulthood, I had my fair share of Lean Cuisines and other freezer meals. They were cheap and easy, and I didnt have to cook or clean win! But they were full of gross preservatives and typically didnt taste that good.
Fortunately, frozen dinners have come a long way since then. And now we can find pretty good options, even for keto.
When Im shopping for frozen meals, I look at three main categories.
And of course, since were keto, were also going to check if they are in line with our macros. Im going to break down my favorites by protein type so you can search for your favorites, or easily switch it up if youre looking for a change.
Is Store Bought Pesto Vegan
Unfortunately, most pesto brands have parmesan cheese in them even if only a small amount. This means that they are not vegan. Still, like all foods, there are many vegan basil pesto alternatives made nutritional yeast or options that simply leave out the parmesan cheese in favor of extra olive oil or pine nuts.

How To Store Pesto Sauce
Unless you have a huge family, this recipe likely makes far too much pesto for a single meal. So, what is the best way to store pesto?
I like to take my leftover pesto and freeze it in an ice cube tray. A regular-sized tray for ice cubes works perfectly. Each cube is equivalent to one serving.
After the pesto cubes are frozen, I use a vacuum sealer for packaging the cubes. Then I simply pop them back in the freezer until I am ready to use them. The vacuum sealing step helps to prevent my pesto from getting freezer burned.
When I want to add some pesto to a meal, I take the number of servings I need out of a vacuum sealed bag. To defrost pesto, either leave it in the fridge overnight or use the microwave. Easy!
Keto Trader Joes Recipe Tips
Chicken: I got Trader Joes Just Chicken. You could also use a rotisserie chicken, leftover cooked chicken, or roast off 1 pound of chicken breasts that have been drizzled with olive oil, salt, and pepper in a 425ºF oven for 20-25 minutes.
Pesto: I got Trader Joes Genova Pesto, which is in the refrigerated section near the cheese. You could also use their vegan kale + cashew pesto if you need it to be dairy free. Any store bought pesto would work. I even have a recipe for pesto that is dairy free!
Mayonnaise: I seriously never buy store bought mayonnaise. I always always always make my own. But for convenience purposes store bought mayonnaise works just fine.
Tomatoes: For sure dont skip the step of straining the tomatoes, otherwise this chicken salad will be watery. You could also use larger tomatoes. Strain those too after chopping. Sun dried tomatoes would be delicious also!
Serving: I served this on cauliflower thins that I get at Trader Joes. Outer Aisle Gourmet also makes cauliflower thins, I often see them at Costco. But you can serve this on your favorite keto friendly bread, on lettuce leaves, a big scoop on top of baby greens and eat it as a salad, etc.
Dairy Free: If you need this to be dairy free, make sure you use my homemade dairy free keto pesto, or a store bought dairy free pesto. The cauliflower thins also have dairy, so instead use a different keto friendly bread or serve on lettuce leaves.

Alternatives To Frozen Dinners
If your budget doesnt allow for frozen dinners, or youd just rather know exactly whats going into your food, try doubling any recipes that you make during the week. Package the extra portions into freezer safe containers that you can grab and go.
