Making homemade yogurt doesnt have to be complicated! Heres how we prepare it, without any special equipment :

  • Sterilize jars. Heat jars in the dishwasher, or with hot, soapy water, to sterilize.
  • Make almond milk. Blend the almonds and water to make almond milk.

TIP: Do not use store-bought almond milk the preservatives will prevent the yogurt from fermenting.

  • Strain. Strain the nut milk through a nut milk bag or cheesecloth, into a saucepan.
  • Heat. Heat almond milk and cream in a saucepan over medium heat, until bubbles form on the edges. Do not simmer or boil!
  • Add gelatin and lecithin. Sprinkle gelatin over the milk mixture and whisk until completely dissolved, then remove from heat and whisk in sunflower lecithin.
  • Cool. Pour cream mixture into sterilized jars and let sit at room temperature for about 20 minutes, until its between 100-110 degrees F.

TIP: Use an instant read thermometer to be sure! The temperature is important. If its too high, the probiotic cultures can die, but if its too low, they wont activate.

  • Ferment yogurt. Cut open one probiotic capsule over each jar and stir in powder until combined. Cover with lids.
  • Incubate. Turn oven light on Place jars on a sheet pan in the oven and close the door for 12-24 hours.

TIP: The longer you incubate, the more sour your yogurt will be. If youre like me and tend to forget about it, stick a post-it note on your oven door.

Try to replace all soda and juice consumption with something that has no sugar or only trace amounts of sugar. Switch out fruit juices for low-carb smoothies and tea. Instead of adding sugar to your coffee, you can put a few drops of stevia in there to sweeten it up. Stevia is a great sweetener and wont increase your blood sugar levels so its a perfect way to sweeten your morning coffee. If you find stevia to have a bitter aftertaste, erythritol and monk fruit extract are two other keto-friendly sweeteners worth trying.

What Is Keto Yogurt

For a yogurt to be Keto yogurt it has to be acceptable as an all-around excellent addition to a ketogenic diet. This means that it doesnt need to be combined with other fats, or limited in its consumption in order to offer an optimal ketogenic macronutrient ratio.

It is important to note that not all low-carb yogurts are truly keto friendly, even if they advertise that they are.

Peak brand yogurt, with 17% milkfat, boasts 38.4 grams of fat per serving, and a moderate 12.8 grams of protein. It is the only yogurt weve found that is truly a keto yogurt.

With a 3:1 fat to protein ratio and only 6.4 grams of net carbs, it makes an excellent all-round addition to a well-formulated ketogenic diet.

When choosing a keto yogurt always look at the ingredient list. Brands with fewer ingredients offer a less processed product, one without industrial sweeteners and oils.

Remember, fresh yogurt is simply milk and natural cultures. Everything else is an attempt to reduce cost, stimulate your carb addiction, or increase shelf life.

Store-bought Greek yogurt is made from cows milk and is initially made the same way as other dairy yogurts, with the same strains of bacteria. The commercial method takes approximately 6 hours maximum. To make Keto friendly Greek yogurt we recommend up to 24-hours. To make it Greek style the yogurt is then strained for a time to remove some of the liquid whey. Besides improving the consistency, straining also increases the protein and removes even more of the lactose sugars which helps to further lower the amount of carbohydrate in the yogurt.

This has been my go-to yogurt for years. Its a little different from the other yogurts in this review as its plain yogurt. I usually add a little stevia or fruit myself to add a bit of flavor.

Ive been eating this yogurt due to its high protein content , low carb, and low-calorie profile, and because its a plain yogurt I can add whatever flavor to it I like.

I do see a small blood sugar impact from this yogurt, probably due to the lactose and high protein content.

The friendly bacterial culture that turns milk into yogurt removes much of the lactose in milk. This reduces the sugar in the product. Dr. Jack Goldberg, the co-author of “The Four Corners Diet, ” tested fermented milk products. He found that up to 8 grams of carbohydrate are consumed by the bacteria in one cup of yogurt that contains live cultures.

Under ideal circumstances, this would reduce the 12 grams of carbohydrate in a cup of milk to about 4 grams of carbohydrate in the yogurt made from it. However, in commercially produced yogurt, the fermentation process may be stopped before it reaches that low level.
