But some keto products, especially bread and baked goods, sometimes use gluten as a stabilizer. So when eating these bread, doughnuts, and cakes, you wont knock yourself out of ketosis, but youre still consuming gluten which upsets your stomach.

The opposite is also true. Just because a food is gluten-free doesnt mean its healthy. Quinoa, rice, oat and buckwheat are all fine on a gluten-free diet. But they have a GI score of over 50, meaning they spike your blood sugar and insulin as high as table sugar.

A 1/4 cup of almond flour contains 160 calories, 14 grams of fat, 6 grams of protein, and just 2 grams of net carbs, making it one of the best keto flour alternatives. Due to its high-fat content, and lack of gluten, you may need additional eggs or baking powder to give your baked goods more structure.

The typical almond flour is made from almonds that are blanched and ground into a fine flour. It tends to add a lightly sweet flavor and a moist texture to baked goods, making it ideal for low-carb cakes, cookies, bread, and pie crusts.

What Not To Do With Keto Flours

  • Dont Swap Keto Flours you cannot replace one sort of keto flour with another one with the same ratio.
  • Dont Use like All-purpose Flour. Unfortunately, you cannot just swap one cup of all-purpose flour with one cup of keto flour to make a cake.
  • Dont Make them at home. I know it is tempting to grind almonds in a blender to try and make homemade almond flour, but this will not be ideal. Homemade almond flour is always much coarser than its store-bought equivalent, even if you have used blanched almonds.

So as a keto baking beginner, do not try to adapt recipes or change things. Start by following a well-tested keto baking recipe, using the correct ingredients to avoid disappointment.

Why Cant I Just Use Regular Flour On Keto

The short answer is its too high in carbohydrates!

You need to keep your carb intake under 25g per day on a Keto diet. Its vital for making sure your body stays in nutritional ketosis. And since regular flour contains lots of carbohydrates, youll just be making things harder for yourself.

Regular flour also contains gluten, which is problematic.

Gluten has been proven to cause inflammation and digestive issues. Yes, even in folks who arent celiac! And non-celiac gluten sensitivity has also been linked to various chronic health conditions, too. So avoiding gluten is another good reason to stay away from regular flour!

How I Run My Grain Free Sugar Free Bakery

Gluten Free Keto Friendly Almond Flour Bread

I do not use any grains or sugar whatsoever. However, I cannot call my bakery gluten free, because there could be cross contamination.

There are times my kitchen cooks pasta or bread products that are not gluten free. These are not done at the same time and my flours are kept in separate places.

I still can say that my baked goods are wheat free, grain free and sugar free. Since I dont have a 100 percent gluten free dedicated kitchen, nor do some of the products I add, I cannot officially label my products gluten free. Some products may say on their label made in an environment that is not officially gluten free.

You will notice that many restaurants now choose to say wheat free instead of gluten free on their menus, because they cannot guarantee that there is no cross contamination.

The Secret To Easy Low Carb Gluten

To be honest, I didnt expect the first version of this easy almond flour bread to make it to the blog. It was mostly just for the family, and I planned to make several versions before sharing it. But when my husband asked me why I bought real bread, I realized this was one to share right away!

Almond flour on its own tends to be a bit crumbly. Thats perfect for biscuits and cakes, but a sturdier low carb bread loaf is better for sandwiches. It doesnt have the gluten that wheat flour has to make breads chewy and sturdy.

But if you use too much psyllium, the end result can be gummy. The good news is that my close to no carb bread recipe doesnt require a lot of psyllium husk powder. I used only 1/4 cup for the entire loaf, compared to 2 cups of almond flour.

The psyllium husk powder transformed what would be a crumbly almond flour bread into sturdy slices that can stand up to sandwiches and spreading just about anything.

You may even be able to reduce the amount to 2-3 tablespoons, which Ill try next time. Youll want to reduce the water a bit if you do that.

Common Name For Psyllium Husk

Psyllium husk is the common name for several plant seeds used to produce mucilage, a thick, gluey compound that all plants produce. It is mainly used as a dietary fiber to relieve constipation and in keto baking as a thickener.

Many brands like Metamucil sell psyllium husk powders as supplements not as baking ingredients. This is NOT suitable for keto baking.

Whole psyllium husk is what you need in keto baking. It is grainier and absorbs moisture very well in baking, acting as a glue, a binder. It adds elasticity to keto bread and wraps and binds food.
