Once you have been low-carb for a while and really understand how to use low carb flours, you may wish to start experimenting with your old recipes using lower carb flours instead.

    All-purpose flour or any wheat-based or grain-based flour is not keto-approved. They are as bad as white sugar as they have a lot of carbs that will raise your blood sugar level quickly and take you out of ketosis.

    Luckily, there are other flours you can use for keto baking. However, keto-friendly flours have quite different properties and should not be compared or replaced by all-purpose flours to adapt a recipe. Keto flours are extremely low in carb, mostly made of finely grounded nuts, seeds, or pure fiber like psyllium husk.

    Their chemistry is completely different from all-purpose flour . For example, coconut flour, a popular keto flour has 10 times more fiber which means you will use tiny amounts to obtain the same cake batter. But also, you will need to add way more liquid to activate the fiber.

    Why Imos Are Not A True Fiber

    IMOs are a glucose polysaccharide with polymer lengths of 2 to . The IMO gluco-polymer consists predominantly of alpha 1,4 and alpha 1,6 bonds which are partially digested but less fermentable than short chain polymers Inulin, FOS, XOS, & GOS.

    Since IMOs do not resist digestion completely in the human small intestine, fewer polymers reach the colon for fermentation by gut microflora.

    IMOs are ~60% sweet as sucrose, which can be attributed to the polymer composition including di-saccharides maltose and maltotriose. These compounds account for the sweet taste of IMO.

    The characteristic bond type of IMOs allow for partial digestion in the small intestine and may also result in free glucose causing blood sugar spikes for certain individuals.

    The digestive resistant fraction of IMOs is also subject to debate and may be as low as 30% or less. AOAC testing methods do not capture IMO polymers as a fiber.

    Confused about the difference between tapioca flour and tapioca starch. Tapioca flour is sometimes called tapioca starch as well.

    Some brands consider their tapioca flour and starch the same. However, the other tapioca flour is just cassava flour that is marketed for the Caribbean and South American markets.

    To avoid confusion, tapioca flour and starch are essentially the same. They are also gluten-free.

    The Various Names Of Coconut Flour

    When you analyze the nutritional information table you can see that both flavors of crackers are low in carbs at only 5 grams and 3 grams of net carb for a serving of 6 crackers or 14 grams. This means that they can easily fit into the daily carbs of a keto and low carb dieter.
