Tips For Perfect Homemade Keto Ice Cream
The sweeteners: This is the most critical component of making homemade keto ice cream that stays soft and scoopable. Its non-negotiable, folks. You need a mix of two sweeteners or it wont work. The first should be powdered Swerve, and the second should be Bocha Sweet .
If youre wondering where this combo of sweeteners comes in, please refer to the condensed milk recipe.
- Why it works: The sweeteners appear to have a symbiotic relationship, with each one making up for what the other lacks. If youve ever made ice cream with just erythritol, you know how rock hard it gets in the freezer. Ive tried doing all Bocha Sweet but then it never firms up at all and stays like soft serve. Together, they are perfect.
Sugar free condensed milk: My homemade sweetened condensed milk is also an integral part of the recipe. It may seem like added work but if you are making keto vanilla ice cream without eggs, you need a thicker base. Straight cream works okay but this thicker base ends up similar to a custard and works even better.
The xanthan gum: Yes, this is pretty important too. Xanthan is often in commercial ice creams because it inhibits recrystallization. If you prefer, you can try glucomannan in the same amount. I have to admit, I havent tried that yet in ice cream.

How To Make No Churn Keto Ice Cream
To make no churn low carb ice cream, transfer the sugar-free ice cream mixture to a freezer safe container, and freeze!
TIP: The second container option above means your ice cream will be ready sooner! It also saves me freezer space because I can get rid of one of the containers once we go through half the ice cream, instead of a larger container sitting there half full.
The key to the no churn sugar-free ice cream recipe is to take it out and stir it every 30-60 minutes, especially for the first 2 hours, and every 60-90 minutes for a few hours after that. This essentially does the work of the ice cream maker if you dont have one. Dont skip this step, because it breaks up ice crystals and prevents the ice cream from becoming too hard or icy.
Edys No Sugar Added Ice Cream
Using another example from a popular ice cream brand, Edys came out with a line of no sugar added ice cream. But before you celebrate, theres a catch similar to the Breyers example.
Despite the no-sugar-added label, a serving still contains 5 grams of sugar. Youll find Splenda, maltodextrin, maltitol syrup, and sorbitol as its main sweeteners. As we just mentioned, these can still lead to a spike in insulin and weight gain, just like sugar.
Not only that, a serving of their butter pecan ice cream clocks in at 19 grams of carbs when you subtract half of the sugar alcohol amount. Even if you subtract the full sugar alcohol amount, you wind up with 17 grams of net carbs, which is still pretty high.
If youre aiming for 20 to 25 grams of net carbs per day, just one serving of this ice cream could wipe out your entire days worth of carbs.
Edys no sugar added vanilla flavor isnt much better. It contains between 16.5 and 14 grams of net carbs per serving . This is much higher than the other low sugar ice creams and frozen desserts on this list.
You can see why it pays to be smart about reading the labels on any ice creams marketed as keto-friendly or low in sugar.
Finally, theres another keto-friendly ice cream that recently hit the market called N!cks. But, unfortunately, its another one youll want to proceed with caution.

Breyers Carb Smart Vanilla

This carb smart ice cream is pretty bland even for vanilla. As keto ice creams go, this one didnt feel worth it. The taste and texture didnt hold a candle to real vanilla ice cream. It also uses maltitol for sweetness, which some keto dieters like to avoid for its higher glycemic index.
Preservatives And Other Additives
Manufacturers use organic and inorganic preservatives to enhance the flavor of foods, improve their texture, and keep them shelf-stable longer.
But the problem with many of these chemicals is that the long-term human health effects are still unknown.
One popular preservative used in ice cream is maltodextrin, a highly-processed powder usually made from corn.
Maltodextrin is high on the glycemic index and will definitely spike your blood sugar. It can also alter your gut bacteria in a way that makes you more susceptible to disease.
Additives like artificial colors may have carcinogenic and neurotoxic effects in certain populations. And high omega-6 vegetable oils like soybean, peanut, and sunflower can cause significant inflammation.
To be safe, avoid any low-carb ice cream with:
- Preservatives such as sodium phosphate, potassium sorbate, propylene glycol, sodium benzoate, sodium nitrate, and sodium nitrite.
- Food colorings such as artificial red, yellow, and blue dyes.
- Low-quality vegetable oils such as soybean, peanut, and sunflower.
Thanks to the rise in popularity of the keto diet, big food manufacturers are starting to hop on the low-carb train. But many of these so-called keto ice cream options contain questionable ingredients that are likely to kick you out of ketosis.
Some of them may also boast lower net carbs than whats really hiding in that pint.

You dont want to add a lot of low carb granulated sweeteners like erythritol because the ice cream will become grainy and itll have that annoying cooling sensation. Instead, its better to use a small amount of either stevia or monk fruit to fully sweeten this ice cream without any after flavor.

What Is The Best Pan/container To Use For Freezing Homemade Ice Cream
Whats the best container or pan to store your homemade keto ice cream in? We have tried several different options but the one we found to work the best is our 9×5 metal loaf pan. Its the same pan I use to make our Lemon Loaf, Pumpkin Bread, and Zucchini Bread.
The pan is not too tall or deep that it freezes properly, and being in the long loaf pan makes it super easy to scoop right out.
Sweeten With Stevia Extract
In order to sweeten your ice cream, you will want to add some type of low carb granulated sweetener. I personally prefer to use stevia for a variety of reasons. Its naturally extracted from the leaf of the stevia plant, it contains no calories, and I just like the taste it provides compared to other low calorie artificial sweeteners. Plus you dont need to use nearly as much of it compared to refined table sugars in its natural format, its actually 100-300 times sweeter than table sugar. All of these reasons combine to make it the ideal sweetener choice for anyone following a keto style low carb diet.
Last but not least, this recipe calls for eight ounces of softened cream cheese. Just like the heavy whipping cream, this ingredient is a rather common staple for many people who are following a keto diet. It hits the keto trifecta: a ton of fats, a moderate amount of protein, and minimal carbs. When combined with the whipped cream, it also helps to give your ice cream its rich, silky texture, which is essential since it wont be churned at all.
To make the ice cream, simply mix together the above four ingredients until they are well combined. Then pour the mixture into a container, seal it, and freeze it for at least four hours.
