After speaking to our friend Deana, the founder of Good Dees baking mixes, we learned beef gelatin powder is her secret keto baking ingredient. Beef or pork gelatin powder gives cookies and other keto baked goods a chewy texture, and you can easily find it at your local grocery store or online.

How To Make Cake Mix Keto Cookies

STEP ONE: First, start by preheating the oven to 350 degrees F and lining a baking sheet with parchment paper. In a large mixing bowl, add the keto vanilla cake mix package, eggs, oil, and vanilla extract and gently mix the ingredients into a batter.

STEP TWO: On the baking sheet, use a cookie scoop to drop tablespoon-sized balls of dough about 2 inches apart from each other. Bake these Keto Cake Mix Cookies for 8-10 minutes or just until they are golden brown on the bottom.

STEP THREE: While the cookies are baking, you can prepare the keto buttercream frosting. In a medium-sized mixing bowl, add the softened butter, erythritol , heavy whipping cream, and teaspoon of vanilla extract. Mix the frosting with a handheld mixer for 1-2 minutes or until it is creamy.

To make sure we stay on track with our no sugar cookie recipe. I have here used a sugar free dark chocolate from amul. This particular type of dark chocolate does not have added sugar in it. Instead it has maltitol which is a keto friendly sugar alternative. Maltitol is a sugar alcohol, much lower in carbs than sugar and has lower glycemic index.

  • Fine Almond Flour: It works, but results in a too flat of a cookie for my liking.
  • Coconut Flour: Its pretty bad, so dont try it.
  • Coconut Oil: It also doesnt work that well. The cookies melt too quickly and stay in more of a ball shape.
  • Without Xanthan Gum: Too flat. If you baked the cookies for a little less time, it could definitely work. I suggest 8 minutes.

    Can Sugar Free Cookies Actually Taste Good

    Growing up, whenever wed go to my grandparents house there would be two sections of treats in the cabinet.

    One was the regular, full-of-fat-and-sugar junk food section specifically for us kids. The other was comprised of sugar-free JELL-O, granola bars, and low carb cookies for my grandfather who had Diabetes.

    One afternoon, I was curious and snuck off with one of the sugar free peanut butter cookies in the not for children stash.

    If Im making the cookies for myself or to serve a crowd not on the keto diet, Ill just use regular powdered sugar or powdered coconut sugar, both of which work fine here as well.

    And I love Confectioners Swerve because it has 0 calories and 0 carbs while also having a 1:1 sweetness ratio compared to regular sugar.

    But, if you don’t have Confectioners Swerve, another great option is monk fruit sweetener. And, as far as monk fruit sweeteners go, I recommend using Lakanto’s Confectioners. It’s just as sweet as sugar and can be substituted on a one-on-one basis it.

    Does Gluten Free Mean Keto

    For those that are new to the peanut butter cookie realm there is a few things you should know. While most 3 ingredient peanut butter cookies are gluten free, they certainly are not sugar free! Standard three ingredient peanut butter cookies will use a 1/2 cup of sugar to make just 12 cookies. Thats 100 grams of carbs total, or 8 grams of pure sugar per cookie. Low carb peanut butter cookies use sugar free sweeteners like erythritol to sub all the carbs that come from sugar in most peanut butter cookies. Just because a recipe you find is gluten free, that does not make it keto. Sugar is one of the biggest enemies on a keto diet, so do yourself a favor and just stick to these 100% keto approved low carb peanut butter cookies.

Almond flour is high in fats, low in net carbs and is grain free. For this recipe I have used homemade almond flour. To make the homemade almond flour, I blitzed the almonds in a food processor with their skins on. This coarsely blended almond flour will be perfect for cookies and give it a good texture. Be careful to only pulse the almonds until they form a meal like consistency. Blend the almond for too long and you will end with almond butter, which is amazing but not what this recipe calls for, haha!

    You can also use the packaged almond flour that is made from blanched almonds. This type of almond flour is sweeter in nature and is much finer in texture. However if you are allergic to nuts, you can also make keto cookies coconut flour!
