Healthy Flourless Brownie Cookies
Yes, the word healthy is in there and it isnt by accident.
Inspired by the Starbucks chewy chocolate cookie, my version has all the same flavors, textures and tastes, but with a healthy twist.
Its 100% sugar free, dairy free, low carb and keto friendly. It is also completely paleo and gluten-free. However, I wanted to make an option without eggs, and as such, we have a vegan option too!
Can I Store Keto Brownies In The Freezer
Yes, you can store keto fudgy brownies in the freezer! Wrap the uncut keto brownies in foil or parchment paper for up to 4 months.Storing pre-cut brownies is also possible. Just make sure to individually wrap each serving, then them in a freezer bag. When ready to enjoy thaw at room temperature or in the fridge.
Storing Your Keto Brownies
Now, this recipe makes 9 “normal” sized brownies – but, you can make more, or less, depending on how you cut them.
And if you are making these brownies for your family or friends, they may not last an entire day.
But if they do, you can store the brownies you have leftover in an airtight container or wrapped tightly in plastic wrap for up to 4 days. I prefer to keep mine at room temperature, but you can also store them in the fridge.
And if you want to keep your brownies for longer, wrap them tightly in plastic wrap and you can store them in the freezer for up to 3 months.
Also, having these brownies frozen is basically like eating fudge, so you might want to make two batches and freeze one of them!

How To Cut Fudgy Keto Brownies:
To get perfectly sliced brownie squares that wont crumble:
- CHILL: place the brownie pan in the fridge to chill and firm up for 30 minutes or allow the brownies to cool completely at room temperature
- LIFT BROWNIES OUT OF PAN: remove brownies from pan by using the parchment paper
- USE A PLASTIC KNIFE: and my secret for clean cut brownies is to use a plastic knife since they are naturally non-stick and wont break your brownies up as you make your slices. Cut with a swift, straight down motion to cut each square. Then, wipe the blade off and cut again.
- WIPE DOWN AFTER EACH CUT: If you dont have a plastic knife, you can also run a very sharp knife under hot water, wipe the blade dry then cut with a swift, straight down motion to cut each square. After cutting each square, run it under hot water again and wipe the blade dry and repeat.

Usually, brownies are made with flour and sugar, so well try to make a lower-carb version while aiming for the best texture and taste.

I’d say one of the most important tips for extra fudgy brownies is to slightly under-bake them. Yes, take them out before you think they’re done! The corners should be cooked and the top just set, but you’re looking for a jiggly middle.
If you leave them in the oven for too long, you’ll end up with crumbly brownies. We don’t want that!
Trust me and remove them from the oven after 25 minutes max. Then, simply be patient and let them cool COMPLETELY before cutting. If you place them in the fridge, they will firm up even more.

- If you make the vegan option, the cookies wont bake like traditional cookies. For soft, fudgy cookies, bake for around 9 minutes. For slightly thicker, firmer cookies, bake for 12 minutes.
- Do not refrigerate the cookie dough batter to bake later. It needs to be made fresh and on the spot.

Tempting as it may be, do not try to move, cut, or eat the brownies right away.

How To Make A Fudgy Keto Brownie Recipe
1.) Melt the chocolate: Break the chocolate into squares and place in a small bowl. Place this bowl inside a larger bowl which you have filled with boiling water. The water will heat the walls of the small bowl and melt the chocolate.
2.) Blend the VERY soft butter, powdered sweetener, eggs and cocoa with a blender or in a food processor.
3.) Add the melted chocolate and almond flour and mix until you have a thick, smooth brownie batter. I did this in a food processor, but it is possible to simply stir it together with a fork.
4.) Line a rectangular baking pan or small casserole dish with baking / parchment paper. Cut the paper to size so that it covers the bottom and two sides of the dish. Grease the two remaining sides .
5.) Fill the batter into the dish and smoothen the top. Bake 25 minutes or until the top is firm.
6.) Let the sugar free brownies cool completely before you remove them from the baking tin. They will be VERY soft when warm, but firm up as they cool down.
