But, while they mostly contain keto-friendly ingredients, when you look into the ingredients table you can see that they do have some non-ketogenic ingredients. Those are the cassava starch, cassava flour, and tiger nut flour.

Cassava starch and cassava flour are made from the cassava plant- a starchy tuberous root and they are high in starch and therefore not ketogenic. The tiger nut flour is made from tiger nut, which is also a tuber, but it is not as high in carbs as cassava flour.

    I love this mix for pancakes to make waffles you add a tablespoon of coconut oil to the mix with water to make the waffle batter before cooking them on your waffle iron. These are 100 times better than the frozen variety in my opinion. They are fluffy, sturdy and soak up syrup just like you would want them to.

    The coconut oil really helps with the consistency as well Ill be adding coconut oil to the mix when making pancakes as wellIm not sure why they dont recommend adding coconut oil when making pancakes with the mix, but hands down, this is the best waffle that Ive tried yetand Ive tried a lot!

    So, the verdict? If you have a few extra minutes, the Birch Benders Keto Pancake and Waffle Mix is the way to go for a better low carb waffle. The frozen toaster waffle isnt inedible, however I think youre better off making a batch of waffles using the mix and storing them in the freezer when you need something quick. What I love about Birch Benders in general, is that they use really solid, good ingredients vs random fillers and ingredients that could blur the keto lines.

    Birch Benders makes one of my favorite protein pancake mixes. They are guaranteed to be easy to make and fluffy to eat. Recently, they launched a line of microwavable cup mixes, including several pancake flavors. A pancake in a cup! How cool and cute is that!

    At $11.99 for a package of four, plus shipping, these arent inexpensive. Oh, and they are also marketed as Keto, because people hate carbs now. They are not low calorie though, at an average of 200 calories per tiny cup serving. I dont really know where the calories are coming from , but if Im going to eat 200 calories or more of a small pancake, they better taste fucking good.

    I bought two varieties: Strawberry Shortcake and Classic Maple. I was especially interested in the Strawberry Shortcake, which I tried first. I guesstimated the addition of three tablespoons of water. I thought the batter smelled like a strawberry Pop-Tart, which I love . I microwaved my adorably decorated Strawberry Shortcake cup for 60 seconds and then looked at it very suspiciously. My first bite wasterrible. I tried another bite to be sure and then threw it away. It was dry, tasted artificial, and left me with a bad mouthfeel.

    So are these even pancakes?

    For a long time I envied everyone making Kodiak Cakes, a low carb-high protein pancake. The variety that Walmart sells contains gluten and I avoid gluten because Im sensitive to it. Theres no need to avoid gluten unless youre gluten intolerant. One day in Walmart, still checking to see if they might be stocking the gluten free variety, I happened upon Birch Benders Keto Pancake and Waffle Mix. I just had to give it a try because its also gluten free. There are other varieties of Birch Benders, but I eat a low carb diet and the Keto variety is the only one that I use. Let me clarify here, I DONT DO KETO. I eat low carb but not Keto. This mix is low in carbohydrates so it fits nicely into my menus.

    Birch Benders Keto has 160 calories, 9 grams of protein and 5 grams of net carbs per 2 4-inch pancakes. Due to the almond flour and coconut in the mix, there is a slightly chewy texture to the cakes, which I like. It keeps them from having that simple carb feel. Paired with Maple Grove Farms Sugar Free Pancake Syrup, they are a sweet delight. This syrup is superior to other sugar free syrups because it has a true maple flavor. The pancakes have a mild, buttery taste and I like to cook them in coconut oil which smokes easily so you have to brown them slowly to a rich golden brown for the best flavor and texture. Cooking them slowly gets them plenty done inside and builds a slightly crunchy crust.

Coconut flour on its own is kind of grainy and sucks up too much moisture almond flour by itself yields heavy pancakes. Arrowroot is too carby. But mix them and the magic happens.

    Doing some research it seems that Buttermilk is kind of controversial when it comes to keto. Some people say its ok to use a small amount in a recipe and that it wont mess up your macros too much. Others say that its a definite no-no.

    So that you can make an educated decision here is the nutrition information on buttermilk from 2 different brands I have tried in the past:

    • Kates Homemade Buttermilk: 1 Cup 100 Calories, 2 grams Fat, 12, grams Carbs, 12 grams Sugar, 0 grams Fiber, 8 grams Protein.
    • Organic Valley Lowfat Buttermilk: 1 Cup 100 Calories, 2.5 grams Fat, 12 grams Carbs, 12 grams Sugar, 0 grams Fiber, 8 grams Protein.

    As you can see these two brands are about the same as far as nutritional information, but if you decide to use buttermilk please always check the label because they will vary a bit.
