These flours are used to produce a bread that is very low in carbs, as well as being free from common allergens like soy and gluten. Making homemade bread will give you the best of both worlds as far as taste and ingredient quality go. For a sweet and moist bread option try our keto banana bread recipe.

Store bought low carb breads will typically use a much larger list of ingredients. Some common ingredients in store bought keto breads are vital wheat gluten, oat fiber, soy flour, wheat protein, and more. While these breads taste good and are more convenient than making a loaf of bread from scratch, they do contain some ingredients most people on a keto diet would like to avoid.

When you first set out to make a bread low carb, you are going to need to replace all purpose flour with a low carb alternative. Typically we use almond flour or coconut flour.

Almond flour provides more flavor and a generally more delicious result.

Coconut flour is much more absorbent and can oftentimes result in a dry loaf of bread.

Rather than trying to substitute coconut flour for almond flour, you are usually better off looking for alternative keto recipes that uses your desired flour, because they behave so differently in recipes. Either option is going to be a big improvement over wheat bread.

Fold The Batter Dont Stir

After mixing the first half of the egg whites into the batter in the food processor, youll need to fold that mixture into the remaining egg whites. Its important not to break them down completely at this step. Otherwise, your bread will be dense and flat! Just keep folding gently until you dont have chunks or streaks.

A few people have complained about the batter being too thick to fold in the egg whites. Most likely this was a difference in measurements or ingredients, but if this happens, you can salvage it. Just pulse in a little more egg whites into the food processor to make the main batter a little thinner, then fold that into the egg whites.

Despite the health claims for eating gluten-free, no scientific evidence supports weight loss with a gluten-free diet or suggests that the general population would benefit from avoiding gluten for health reasons.20

Although many people think that a gluten-free diet is healthier and more nutritious, the opposite may be true, as many products marketed as gluten-free are highly processed.

These gluten-free foods are often made with refined grains and additives such as tapioca starch, less commonly fortified with folic acid and iron, and have less fiber and more sugar compared to regular gluten-containing foods.21

In fact, several studies have actually found a tendency toward weight gain and obesity among those who follow a gluten-free diet.22

In addition, highly-processed gluten-free diets that are high in refined carbohydrates are often deficient in important nutrients such as iron, zinc, vitamin D, and protein.

We suspect that these drawbacks would be significantly attenuated by eating a whole-foods, minimally processed gluten-free diet.

Theres not a strict definition for keto bread, but on a basic level, its bread that has a lower carbohydrate count than other types of bread. Its best to find keto bread thats also made without wheat and other gluten-containing grains, but when youre purchasing pre-made bread, thats not always easy. As long as youre not sensitive to gluten, wheat-based breads can fit into a keto plan, too.

Keto Bread With Vital Wheat Gluten

One of the main reasons we avoid wheat bread on keto is because of the grains but what people dont know is that the protein in wheat aka gluten is entirely keto friendly and very low carb! If youre lucky enough to be able to get your hands on some, you can make this keto bread with vital wheat gluten!

**NOTE: This bread contains gluten and therefore anyone with celiac or gluten intolerance should NOT make this bread.

So I havent tried making this vital wheat gluten bread in a bread machine but its worth a try. If anyone gives it a go let me know how it turns out!

The two main ingredients in this bread vital wheat gluten flour and almond flour. You will want to make sure that you get vital wheat gluten flour and NOT gluten flour. Most gluten flours are just high protein wheat flours that are high in carbs.

As for the loaf pan I used a 9×5 loaf tin, but I also halved the recipe and tried in a 1 loaf pan . I recommend using an 8.5 x 4.5 for optimal rise. The 9×5 was great but a little wide. The 1lb tin worked perfectly for half the recipe so a proper 8.5 x 4.5 pan will work just as well.

I used a stand mixer as seen in the video attached to this page. Its really important to check the consistency of the bread frequently. It should only take around 5-10 minutes for it to be kneaded properly so youll want to pull a piece of the dough and if it stretches without breaking then youre good to go.

Can You Eat Mikeys Grain

The main ingredients in this bread are eggs and almond flour, and the only ingredients that are not keto-friendly in Mikeys bread are the tapioca starch and the honey.

Tapioca starch is a starch derived from the roots of the cassava plant. It is mainly used as a thickener, sometimes it is used as flour and even desserts. Since it is a starch, it is high in carbs and therefore not ketogenic.

Regarding honey, almost all of its calories come from carbs and all of its carbs are net carbs as it has 0 fiber. So, it is definitely not ketogenic.

The good news is that both tapioca starch and honey are lower on the ingredient list, which means that they are not contained at large amounts- thats probably why it only has 4 grams of net carbs per slice which weighs 46 grams- double the weight of normal bread.

Technically, Mikeys Grain-Free Sliced Bread is not ketogenic, but if you do not mind small amounts of non-ketogenic foods then you can consume it.

How many times have you heard some variation on I had no idea _____ had so much _____ until I read the ingredients. I cant believe Ive been eating it for years! This will come as a surprise for many people, and its a change from my original keto bread recipe. Do not use a toothpick to test for doneness. It will seem like its done before it actually is!

Instead, use these markers of doneness for this white paleo bread:

  • The keto white bread should not make a squishy sound when you press on the center.
  • The internal temperature should reach at least 200 degrees F.

It Helps Troubleshoot Weird Nagging Health Issues

Got headaches? Random skin issues? Irritable Bowel Syndrome ? Other bizarre digestive problems that dont go away after going keto? Inexplicable fatigue? All of the above?

Bulletproof Bread Recipe: Keto Low Carb Bread

Makes 1 Loaf

Instructions:

  • Preheat oven to 325 degrees. Use middle rack and remove any racks above as bread will expand while baking.
  • Generously butter a loaf pan/dish with grass-fed butter.
  • Beat 6 egg whites until stiff peaks form a hand mixer on high works well. Really beat the whites until the peaks are VERY stiff. If you dont beat them enough, theyll collapse when you add the whey and egg yolks, and youll end up with a Styrofoam-like concoction. Yuck.
  • Add ½ cup of Bulletproof Collagen Protein and the 6 yolks. Blend gently on low just until fully incorporated. The batter will be fluffy.
  • Pour batter into prepared dish and place in oven.
  • Bake for 40 minutes.
  • Remove and allow to cool completely. The loaf will sink to a normal height.
  • Once fully cooled, release from dish, slice and serve.
  • Leftovers will keep in the fridge for a few days.
  • Reheating recommendation: Heat a skillet to medium-high and add ghee or grass-fed butter, sear bread slices in skillet until lightly toasted on each side, about 30 seconds per side. Do not overheat.

    Use heat-stable collagen over whey protein, and keep in mind that oxidized cholesterol from the cooked egg yolks can cause a little inflammation, so dont eat this every day. Stick to every few days, if you can control yourself.
